Roasted carrots can be so much more than just a simple side dish. Combined with light and fluffy MANI organic feta, they create a dish that requires few ingredients yet offers surprising depth: natural sweetness, delicate roasted aromas, subtle acidity, and a creamy freshness that ties everything together.

Ingredients:
For the carrots:
- approx. 300g carrots
- 2 tbsp MANI Organic Extra Virgin Olive Oil
- 1 tbsp honey or maple syrup
- 2 tbsp sesame seeds
- Sea salt flakes
- pepper
- Chopped parsley
For the whipped feta:
- 1 pack MANI Bläuel Organic Feta PDO*
- 130g Greek yogurt
- zest of a small lemon
- Juice of half a lemon
- 2 pieces MANI Organic Garlic in Olive Oil
- 1 tbsp honey or maple syrup
- 3 tbsp MANI Organic Extra Virgin Olive Oil
- salt and pepper
*Available in well-stocked organic food stores
Preparation:
- Preheat the oven to 180°C (top/bottom heat).
- Wash or peel the carrots and halve them.
- For the marinade, mix olive oil, honey, sesame seeds, salt, and pepper in a bowl. Toss the carrots in the mixture until well coated.
- Spread the carrots on a baking sheet lined with parchment paper and roast in the oven for 20-25 minutes until they are soft and lightly caramelized.
- Meanwhile, prepare the whipped feta: Mix all the ingredients in a blender or with a hand blender until creamy and season with salt and pepper.
- Spread the whipped feta on a serving platter and place the roasted carrots on top. Drizzle with a little olive oil and sprinkle with chopped parsley.
