Carrots with whipped feta

Roasted carrots can be so much more than just a simple side dish. Combined with light and fluffy MANI organic feta, they create a dish that requires few ingredients yet offers surprising depth: natural sweetness, delicate roasted aromas, subtle acidity, and a creamy freshness that ties everything together.

Preparation:

  1. Preheat the oven to 180°C (top/bottom heat).
  2. Wash or peel the carrots and halve them.
  3. For the marinade, mix olive oil, honey, sesame seeds, salt, and pepper in a bowl. Toss the carrots in the mixture until well coated.
  4. Spread the carrots on a baking sheet lined with parchment paper and roast in the oven for 20-25 minutes until they are soft and lightly caramelized.
  5. Meanwhile, prepare the whipped feta: Mix all the ingredients in a blender or with a hand blender until creamy and season with salt and pepper.
  6. Spread the whipped feta on a serving platter and place the roasted carrots on top. Drizzle with a little olive oil and sprinkle with chopped parsley.
