Mani Farmers’ Salad: Favorite Dish of Olive Farmers During Harvest Season
Ingredients for 4 servings:
- 600 g boiled potatoes
- 3 spring onions or 2 red onions
- 1 large orange
- 70 g ΜΑΝΙ Kalamata olives
- 3 tbsp ΜΑΝΙ capers in olive oil
- 4 tbsp MANI extra virgin olive oil, Selection
- 3 tbsp mild vinegar
- 1 tsp oregano (fresh or dried)
- Salt, pepper
Preparation:
- Peel the cooled potatoes and cut them into 2 cm cubes. Place them in a salad bowl.
- Clean and slice the onions into fine rings.
- Peel the orange, cut into segments, and halve them. Add them to the bowl along with the olives.
- Mix the ingredients with the drained capers. Drizzle with olive oil and vinegar, then season with salt and pepper.
- Finally, sprinkle with oregano.
