This vegan burger is not only quick and easy to prepare but also tastes incredibly delicious. For the vegetable patties different green vegetables with oatmeal are used, which makes the patties not only healthy and nutritious but they have the perfect consistency. The marinated beets bring some color and taste and the vegan Tsatsiki brings a touch of Greece to the plate. We promise these vegan burgers are the hit for the next party!

Zutaten:
Patties:
- 400 g frozen leaf spinach, thawed
- 300 g frozen peas, thawed
- 100 g oatmeal
- 1 tbsp flaxseed, ground
- 2 tbsp water
- 1/4 tsp caraway, ground
- some nutmeg, grated
- some lemon juice
- salt & pepper
- MANI 100 % virgin olive oil for frying
Tsatsiki:
- 1/2 cucumber
- 200 g vegetable yoghurt
- 1 large or 2 small garlic cloves, pressed
- 1 tsp whit wine vinegar
- 2 tbsp MANI extra virgin olive oil with lemon
- Dill to taste
- salt & pepper
Beetroot, marinated:
- 2 small beets, boiled and peeled
- 2 tbsp balsamic vinegar
- 3 tbsp MANI extra virgin olive oil, Selection
- 1 tbsps agave syrup
- 1 tbsp water
- 1 sprig of rosemary
- salt & pepper
Onion rings:
- 2 small red onions
- some flour
- MANI 100 % virgin olive oil for frying
For the burger:
- fresh leaf spinach or green salad
- some lemon juice
Preparation:
- Cut the beetroot into 0.5 cm slices, mix the remaining ingredients in a bowl and place the beetroot in it. Let stand for at least 30 minutes or overnight in the fridge.
- Mix the flaxseed with the water and let soak for 10 minutes. Roughly puree the thawed spinach and peas and mix with the remaining ingredients. Form round buns in the size of burger buns and fry in MANI 100% virgin olive oil on both sides until golden brown.
- For the tsatsiki grate the cucumber roughly, mix with the remaining ingredients and refrigerate.
- For the onion rings, peel the onions and cut into very thin rings, roll in flour and fry in plenty of MANI 100% virgin olive oil over medium heat until crispy.
- Cut the burger buns in half and toast them to taste, then place spinach or lettuce leaves on the bottom of the bun. Then add the patties, followed by onion rings, beetroot and tsatsiki and finally put the lid on it.
