Caramelized Pears in Olive Oil

Olive oil isn’t just for savory dishes—it can also make desserts something truly special. In this dessert, pear halves are gently caramelized in olive oil, flavored with thyme, honey, and a splash of lemon, and served together with vanilla mascarpone cream and walnuts.
The result: a simple yet special dessert that perfectly combines sweet, fruity, and nutty flavors—uncomplicated, but exceptional in taste.

Ingredients:

  • 4 ripe but firm pears
  • 3 tbsp MANI Organic Extra Virgin Olive Oil, Polyphenol
  • 4–5 sprigs fresh thyme
  • 3–4 tbsp honey (depending on the sweetness of the pears)
  • a splash of lemon juice

    Mascarpone cream:
  • 200 g mascarpone
  • 100 g Greek yogurt
  • seeds of 1 vanilla pod
  • 2 tsp honey

    Additionally:
  • sea salt
  • roasted walnuts

Preparation:

  1. Peel the pears, halve them, and remove the cores.
  2. Heat the olive oil in a large pan over medium heat. Place the pear halves cut side down in the pan and add the thyme.
  3. Fry the pears slowly for a few minutes until the cut surfaces caramelize to a golden brown, then turn the pears over.
  4. Just before finishing, drizzle the honey over the pears and briefly fry. Add a splash of lemon juice.
  5. For the mascarpone-vanilla cream, whisk together mascarpone, yogurt, vanilla seeds, and honey in a bowl until smooth and creamy.
  6. Place the pear halves on plates and serve with a generous dollop of cream.
  7. Sprinkle with sea salt and chopped, roasted walnuts.
