Couscous Feta Bake

Simple, quick, and wonderfully Mediterranean. Creamy feta meets olives, sun-dried tomatoes, and fresh couscous – all together in just one baking dish. Perfect as a main course, for a cozy dinner, or for sharing – uncomplicated and full of flavor.

  1. Place the couscous in an ovenproof dish.
  2. Pour the hot water over it, add the salt and 2 tbsp of olive oil.
  3. Mix briefly.
  4. Place the feta in the center of the dish.
  5. Arrange the cherry tomatoes, sun-dried tomatoes, and olives around the feta, and drizzle with the remaining olive oil.
  6. Bake in a preheated oven at 180 °C (356 °F) fan/air circulation for about 25–30 minutes, until the feta is soft.
  7. Remove from the oven and top with arugula.
  8. Mix everything well, garnish with fresh mint, and serve.
