Simple, quick, and wonderfully Mediterranean. Creamy feta meets olives, sun-dried tomatoes, and fresh couscous – all together in just one baking dish. Perfect as a main course, for a cozy dinner, or for sharing – uncomplicated and full of flavor.

Ingredients:
- 360 g Couscous
- 480 ml hot water
- 1 ½ tsp salt
- 4 tbsp MANI Extra Virgin Olive Oil, Selection
- 1 pack MANI Feta
- 150 g cherry tomatoes, halved
- 8 MANI sun-dried Tomatoes, chopped
- 50 g MANI Kalamata & Green Olives, al naturale
- 3 handful of arugula
- fresh mint to taste
Instructions:
- Place the couscous in an ovenproof dish.
- Pour the hot water over it, add the salt and 2 tbsp of olive oil.
- Mix briefly.
- Place the feta in the center of the dish.
- Arrange the cherry tomatoes, sun-dried tomatoes, and olives around the feta, and drizzle with the remaining olive oil.
- Bake in a preheated oven at 180 °C (356 °F) fan/air circulation for about 25–30 minutes, until the feta is soft.
- Remove from the oven and top with arugula.
- Mix everything well, garnish with fresh mint, and serve.
