Grilled zucchini is a true summer kitchen classic and makes a perfect light grilled side dish. Grilling develops a delicate, slightly smoky aroma, which in this recipe is complemented by feta and toasted pine nuts. Simple, aromatic, and ideal for relaxed summer evenings with friends.

Ingredients
- 3 large zucchini
- 2 pieces of MANI Bläuel Garlic in Olive Oil, finely chopped
- 4 tbsp MANI Bläuel "The Kitchen Hero", Organic Extra Virgin Olive Oil
- 1 tbsp lemon juice
- 50 g MANI Bläuel Organic Feta PDO*
- Fresh basil, chopped
- 3 tbsp pine nuts, toasted
- Salt and pepper
*available in well-stocked organic food stores
Preparation
- Slice zucchini into approximately 1 cm thick pieces. Place on a paper towel, salt, and let sit for 10-15 minutes. Then pat dry.
- Meanwhile, for the vinaigrette, mix 1 tbsp olive oil with lemon juice and garlic.
- Preheat grill to medium heat. Brush zucchini slices with approx. 3 tbsp olive oil.
- Place zucchini on the grill and grill on both sides until golden brown and still firm to the bite.
- Transfer zucchini to a platter, add vinaigrette, and crumble feta over it.
- Sprinkle with toasted pine nuts and basil, and season with salt and pepper.
MANI TIP: Of course, it also works in a pan instead of on the grill.
