Grilled Zucchini with Feta

Grilled zucchini is a true summer kitchen classic and makes a perfect light grilled side dish. Grilling develops a delicate, slightly smoky aroma, which in this recipe is complemented by feta and toasted pine nuts. Simple, aromatic, and ideal for relaxed summer evenings with friends.

Preparation

  1. Slice zucchini into approximately 1 cm thick pieces. Place on a paper towel, salt, and let sit for 10-15 minutes. Then pat dry.
  2. Meanwhile, for the vinaigrette, mix 1 tbsp olive oil with lemon juice and garlic.
  3. Preheat grill to medium heat. Brush zucchini slices with approx. 3 tbsp olive oil.
  4. Place zucchini on the grill and grill on both sides until golden brown and still firm to the bite.
  5. Transfer zucchini to a platter, add vinaigrette, and crumble feta over it.
  6. Sprinkle with toasted pine nuts and basil, and season with salt and pepper.

MANI TIP: Of course, it also works in a pan instead of on the grill.
