Linzer Cookies with olive oil

Linzer cookies with a Greek twist - instead of butter, we use olive oil in our Christmas baking.
Our 100% virgin olive oil has a mild flavor and is ideal for baking cookies and cakes. It makes Linzer cookies especially tender and light – perfect for your christmas cookie plate.

Quantity is sufficient for approximately 30 cookies.

Ingredients:

  • 320 g flour
  • 160 ml MANI 100% virgin olive oil
  • 100 g ground hazelnuts
  • 150 g icing sugar
  • a little vanilla
  • 1 pinch of salt
  • 2 small eggs

Besides that

  • 1 jar of jam of your choice
  • Icing sugar for dusting

Preparation:

  1. For the dough, knead all the ingredients together to form a shortcrust pastry.
  2. Wrap the dough and refrigerate for about 30 minutes.
  3. Then dust the dough with flour and roll it out thinly between two sheets of baking paper.
  4. Cut out 60 cookies and cut a hole in the middle of 30 of the cookies.
  5. Preheat the oven to 180°C (top/bottom heat).
  6. Place the cookies on a baking sheet lined with parchment paper and bake for approximately 8-10 minutes. After baking, leave them on the baking sheet for a short time, then transfer them to a wire rack to cool completely.
  7. Meanwhile, gently warm the jam in a pot.
  8. Spread jam on the cookies without a hole and sandwich them together with a cookie with a hole.
  9. Dust with powdered sugar and enjoy immediately or store in a cookie tin.

 

MANI tip:
When the cookies come out of the oven, they are still soft. They become firm when they have cooled.
