One-Pot Tomato Gnocchi

Creamy, quick to prepare, and bursting with flavor – this one-pot tomato gnocchi recipe shows just how uncomplicated delicious cooking can be. Ingredients:

  • 1 kg gnocchi
  • 4 tbsp MANI Family Hero, extra virgin olive oil
  • 1 large red onion, finely diced
  • pinch of sugar
  • 3 pieces of MANI organic garlic in olive oil , finely chopped
  • 1 tsp dried oregano
  • 70g MANI organic sun-dried tomatoes in olive oil, chopped
  • 4 handfuls of cherry tomatoes, halved
  • 600g chopped canned tomatoes
  • 120 ml water
  • 4 tablespoons whipped cream
  • 4 tablespoons grated Parmesan cheese
  • salt and pepper

preparation

  1. Fry the gnocchi in a large pan with 2 tablespoons of olive oil over medium heat for a few minutes until golden brown, turning occasionally. Then remove from the pan and set aside.
  2. Heat another 2 tablespoons of olive oil in the same pot. Sauté the onion in it for 3-4 minutes until translucent.
  3. Add a pinch of sugar and let it caramelize lightly.
  4. Add the garlic, oregano, chopped dried tomatoes and cherry tomatoes and sauté briefly until everything is fragrant and the tomatoes are soft.
  5. Add canned tomatoes and water and simmer gently for a few minutes.
  6. Reduce heat, stir in heavy cream and Parmesan until a creamy sauce forms. Season with salt and pepper.
  7. Return the fried gnocchi to the sauce and gently fold them in until everything is well coated.
  8. Optionally serve with fresh basil or oregano, arugula and some extra Parmesan cheese.
