Chocolate Cake with Olive Oil

A simple, good chocolate cake should be in every recipe collection. For us, that means: lots of cocoa for an intense but not-too-sweet chocolate flavor, and olive oil in the batter, which makes the cake moist and light. Did you know that cakes made with olive oil even stay fresh longer because the oil binds moisture better?

We prefer to use MANI Bläuel "The Kitchen Hero" – our mild, 100% organic virgin olive oil, perfect for hot cooking and ideal for delicious cake baking.

  1. Preheat the oven to 180°C (top/bottom heat).
  2. Grease a Bundt cake pan thoroughly and dust with flour.
  3. In a large bowl, mix flour, cocoa powder, sugar, baking powder, and salt well.
  4. In a second bowl, whisk together olive oil, milk, eggs, and vanilla.
  5. Gently fold the dry ingredients into the wet ingredients with a spatula or whisk until no lumps of flour are visible.
  6. Pour the batter into the prepared pan and bake for 45-50 minutes. Do the skewer test towards the end!
  7. Let the cake rest in the pan for 15 minutes, then carefully invert it onto a wire rack and let it cool completely.
  8. Dust with powdered sugar or decorate with chocolate glaze, as desired.
