Ingredients:
- 300g of pasta of your choice
- 1 jar of MANI sun-dried tomatoes + 2 tbsp olive oil from the tomato jar
- 1 tbsp capers
- 2 MANI garlic cloves
- 30 almonds
- 1 pinch of salt
- Optional to serve: oregano, (vegan) Parmesan
Preparation:
- Chop sun-dried tomatoes, about 2 tablespoons of olive oil, capers, garlic, almonds and salt in a blender/food processor and process into a pesto.
- Meanwhile, cook the pasta according to the instructions.
- Mix the pasta and pesto well and serve with fresh oregano and (vegan) Parmesan on top, if desired.
