Lentil salad with feta

In spring, food should be light, colorful, and fresh. This salad brings color to the plate, and with our MANI Organic Feta, it gets an extra dose of creaminess and flavor. It's a dish that can be prepared in advance and is ideal as a simple lunch or as a side dish.

Ingredients:

  • 200g lentils (from a can)
  • 1 Pkg MANI Organic Feta PDO*
  • 200g cherry tomatoes
  • 1 red bell pepper
  • 1 small cucumber
  • 1 small red onion
  • 1 bunch of fresh herbs (e.g. parsley, chives, basil)
  • 80g arugula or mixed green salad

    dressing
  • 4 tablespoons MANI extra virgin olive oil, Selection
  • 2 tbsp balsamic vinegar
  • Salt & pepper

*Available in well-stocked organic food stores

Preparation:

  1. Rinse the lentils well and wash the vegetables, then cut them into bite-sized pieces.
  2. Cut the onion into thin strips and chop the herbs.
  3. Mix all the ingredients well for the dressing.
  4. Place arugula/mixed green salad, lentils, vegetables and herbs in a bowl and crumble the feta cheese.
  5. Pour the dressing over the salad and mix everything well.
