In spring, food should be light, colorful, and fresh. This salad brings color to the plate, and with our MANI Organic Feta, it gets an extra dose of creaminess and flavor. It's a dish that can be prepared in advance and is ideal as a simple lunch or as a side dish.

Ingredients:
- 200g lentils (from a can)
- 1 Pkg MANI Organic Feta PDO*
- 200g cherry tomatoes
- 1 red bell pepper
- 1 small cucumber
- 1 small red onion
- 1 bunch of fresh herbs (e.g. parsley, chives, basil)
- 80g arugula or mixed green salad
dressing - 4 tablespoons MANI extra virgin olive oil, Selection
- 2 tbsp balsamic vinegar
- Salt & pepper

Preparation:
- Rinse the lentils well and wash the vegetables, then cut them into bite-sized pieces.
- Cut the onion into thin strips and chop the herbs.
- Mix all the ingredients well for the dressing.
- Place arugula/mixed green salad, lentils, vegetables and herbs in a bowl and crumble the feta cheese.
- Pour the dressing over the salad and mix everything well.
