Mediterranean Vegetable Stir-Fry

This Mediterranean vegetable pan is the perfect dish for anyone who likes it uncomplicated, colorful, and full of flavor. Fresh vegetables, aromatic herbs, and a good olive oil make this dish a light main course that is both satisfying and delightful.

We use MANI Bläuel "The Kitchen Hero" – our mild, 100% organic virgin olive oil, which allows the natural flavors of the vegetables to shine. An uncomplicated dish that brings Mediterranean cuisine directly to your home!

Ingredients

  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 small zucchini
  • 1 small eggplant
  • 1 large red onion
  • 2–3 cloves of garlic
  • 250 g mushrooms
  • 3 tbsp MANI Bläuel "The Kitchen Hero", 100% organic virgin olive oil
  • Salt & pepper to taste
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp sweet paprika powder
  • 1 pinch of chili flakes (optional)
  • 1 packet MANI Bläuel Organic Feta PDO*
  • Fresh oregano or basil for sprinkling

Preparation

  1. Cut bell peppers, zucchini, and eggplant into bite-sized pieces, finely chop garlic, slice onion into rings, and quarter mushrooms.
  2. Heat the olive oil in a large pan. First, sauté the onions and garlic until translucent. Then fry the eggplant and zucchini for 3 minutes, then add bell peppers and mushrooms. Fry everything together for a few minutes until the vegetables are soft but still firm to the bite.
  3. Season with salt, pepper, paprika powder, oregano, thyme, and optional chili flakes. Mix well.
  4. Crumble the feta over the vegetables shortly before the end and gently fold in.
  5. Sprinkle with freshly chopped basil or oregano and, optionally, drizzle with a little olive oil.
