Pasta salad - the perfect dish for summer. You can add any vegetables the summer season offers. This pasta salad gets its Mediterranean flair from our MANI olives.

Ingredients (for 4 servings):
- 500 g pasta
- 2 bell peppers
- 3 to 5 tomatoes
- 1/2 fennel bulb
- MANI Green and Kalamata Olives al naturale, pitted
- Some basil leaves
For the Dressing:
- MANI Extra Virgin Olive Oil, Selection
- Balsamic vinegar
- Salt
- Pepper
- 1 tsp honey
Instructions:
- Bring a pot of water to a boil. Add pasta to boiling salted water and cook until al dente.
- Meanwhile, chop the tomatoes and bell peppers into pieces. Thinly slice (or shave) the fennel and chop the basil leaves.
- For the dressing, mix all the ingredients and add them to the salad bowl.
- Add the cooked pasta, vegetables, and olives to the salad bowl and toss well with the dressing.
- Sprinkle basil leaves over the salad - it can be served warm or cold.
