Ingredients
- 2 red bell peppers
- 2 yellow bell peppers
- 2 small zucchini
- 1 small eggplant
- 1 large red onion
- 2–3 cloves of garlic
- 250 g mushrooms
- 3 tbsp MANI Bläuel "The Kitchen Hero", 100% organic virgin olive oil
- Salt & pepper to taste
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp sweet paprika powder
- 1 pinch of chili flakes (optional)
- 1 packet MANI Bläuel Organic Feta PDO*
- Fresh oregano or basil for sprinkling

Preparation
- Cut bell peppers, zucchini, and eggplant into bite-sized pieces, finely chop garlic, slice onion into rings, and quarter mushrooms.
- Heat the olive oil in a large pan. First, sauté the onions and garlic until translucent. Then fry the eggplant and zucchini for 3 minutes, then add bell peppers and mushrooms. Fry everything together for a few minutes until the vegetables are soft but still firm to the bite.
- Season with salt, pepper, paprika powder, oregano, thyme, and optional chili flakes. Mix well.
- Crumble the feta over the vegetables shortly before the end and gently fold in.
- Sprinkle with freshly chopped basil or oregano and, optionally, drizzle with a little olive oil.
