The dough doesn't need to rise and is ready to be topped immediately. Simply place the freshly baked pizzas directly on the table so everyone can help themselves – they'll be gone in no time! Ingredients:
- 100 g of curd cheese (quark)
- 4 tbsp MANI Family Hero, extra virgin olive oil
- 2 tablespoons of milk
- 1 egg
- 200 g spelt flour
- 2 tsp baking powder
- ½ tsp salt
Toppings as desired:
- 140g passata (strained tomatoes)
- 40 g corn
- ½ bell pepper, diced small
- 1 handful of cherry tomatoes, sliced
- 5 tsp MANI Kalamata olives al naturale, sliced
- 100g grated mozzarella
- 1 tsp dried oregano
preparation
- Preheat the oven to 180 °C (top/bottom heat).
- Put quark, olive oil, milk, egg, flour, baking powder and salt into a bowl and knead by hand or in a food processor to form a smooth dough.
- Divide the dough into 7 equal pieces and shape them into balls.
- Flatten the dough balls into round flatbreads (approx. 10–12 cm in diameter) on a baking sheet lined with parchment paper.
- Top the pizzas as desired with passata, corn, peppers, cherry tomatoes, MANI olives, mozzarella and oregano.
- Bake the mini pizzas for 20-25 minutes, until the cheese is melted and the edges are golden brown.
- Garnish with fresh basil and enjoy warm.
