This warming olive stew with potatoes, peppers and our green olives al naturale is just the thing for days when a big pot is brought to the table for the whole family. Prepared with “The Family Hero” – our extra virgin olive oil for full tables, big pots and every occasion.

Ingredients:
- 3 tbsp MANI Bläuel “The Family Hero” extra virgin olive oil
- 1 large onion
- 4 cloves MANI Bläuel Garlic in Olive Oil
- 600 g potatoes
- 2 red peppers
- 1 heaped tsp cumin seeds
- 1 heaped tsp paprika powder
- 1 heaped tsp dried oregano
- 500 g canned tomatoes (strained or chopped)
- 300 ml water
- 1 jar MANI Bläuel Green Olives al naturale, with oregano
- Salt and pepper
Toppings (optional):
- fresh oregano
- roasted sesame seeds
- chili flakes
- yogurt
Preparation:
- Finely chop the onion, slice the garlic and cut the potatoes and peppers into cubes.
- Heat the olive oil in a large pot, add the onion and slowly fry over low to medium heat until soft and lightly browned.
- Add the garlic, cumin seeds and paprika powder, stir well and briefly fry to allow the aromas to develop.
- Add the potatoes and peppers and fry for about 5 minutes.
- Add the tomatoes and water, cover the pot and simmer for about 20 minutes.
- Add the olives and simmer the stew for another 10–15 minutes, until the potatoes are tender. If the stew becomes too thick, add a little more water as needed.
- Season with salt and pepper and stir in the dried oregano.
- To serve, drizzle the olive stew with a little olive oil and garnish with yogurt, chili flakes, roasted sesame seeds and fresh oregano, if desired.
