Sweet potatoes with feta and spinach stuffing

Sweet potatoes, spinach, and feta – sometimes that's all you need for a really good dish. Creamy on the inside, lightly browned on the outside, with a flavorful filling that makes every bite special.

Ingredients:

Preparation:

  1. Preheat oven to 200°C.
  2. Halve the sweet potatoes, coat them with 5 tablespoons of olive oil and bake them cut-side up for about 55-70 minutes, until they are nice and soft.
  3. Meanwhile, prepare the filling: finely chop the onion and garlic and sauté them in 2 tablespoons of olive oil.
  4. Add the spinach and let it thaw over low heat.
  5. Remove the spinach from the heat, crumble the feta cheese coarsely, stir it in and season with salt, pepper and nutmeg.
  6. Hollow out the baked sweet potatoes slightly and mix the pulp into the filling.
  7. Fill the sweet potatoes and bake for another 15-20 minutes until golden brown.
  8. Garnish with cress or fresh herbs as desired.
