Snap Pea Salad with Dates and Feta

A good salad thrives on freshness, texture, and exciting flavors. This snap pea salad delivers all of that in every bite: sweet dates meet creamy feta, while fresh mint provides aromatic lightness. Tender snap peas add crispness, pistachios give a satisfying crunch – and together, they create a harmonious blend of sweet, salty, and fresh.

Ingredients

  • 450g snow peas
  • 3-4 Medjool dates, pitted and chopped
  • 35g pistachios, coarsely chopped
  • 15g fresh mint, finely chopped
  • 1 pack MANI Bläuel Organic Feta PDO*
  • 4 tbsp MANI Bläuel "The Family Hero", organic extra virgin olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp honey
  • a little lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper

Preparation

  1. Cut snap peas diagonally into fine strips and place in a large bowl.
  2. Mix in chopped dates, pistachios, and mint.
  3. Whisk all dressing ingredients together well.
  4. Toss the salad with the dressing and top with feta.
