Ingredients
- 450g snow peas
- 3-4 Medjool dates, pitted and chopped
- 35g pistachios, coarsely chopped
- 15g fresh mint, finely chopped
- 1 pack MANI Bläuel Organic Feta PDO*
- 4 tbsp MANI Bläuel "The Family Hero", organic extra virgin olive oil
- 2 tbsp white wine vinegar
- 1 tsp honey
- a little lemon juice
- 1 tsp Dijon mustard
- Salt and pepper

Preparation
- Cut snap peas diagonally into fine strips and place in a large bowl.
- Mix in chopped dates, pistachios, and mint.
- Whisk all dressing ingredients together well.
- Toss the salad with the dressing and top with feta.
