Mediterranean Pasta Salad

Pasta salad - the perfect dish for summer. You can add any vegetables the summer season offers. This pasta salad gets its Mediterranean flair from our MANI olives.

For the Dressing:

Instructions:

  1. Bring a pot of water to a boil. Add pasta to boiling salted water and cook until al dente.
  2. Meanwhile, chop the tomatoes and bell peppers into pieces. Thinly slice (or shave) the fennel and chop the basil leaves.
  3. For the dressing, mix all the ingredients and add them to the salad bowl.
  4. Add the cooked pasta, vegetables, and olives to the salad bowl and toss well with the dressing.
  5. Sprinkle basil leaves over the salad - it can be served warm or cold.

The pasta salad can be adapted according to the season and your preferences – we also love adding our sun-dried tomatoes to it!
