Fennel Kohlrabi Salad with Capers

Salad is loved by everyone, and we believe it suits every season. This autumn salad is a welcome change and provides plenty of vitamins and nutrients, even during this time of year. Enjoy trying it out!

Ingredients (for 2 servings):

  • 1 kohlrabi bulb
  • 1/2 fennel bulb
  • 2 small apples
  • 2 small orange snack peppers
  • 2 tbsp MANI capers
  • 2 tbsp chopped parsley
  • Parmesan cheese

For the dressing:

  • 2 tbsp white wine vinegar
  • 3 tbsp MANI olive oil, extra virgin (feel free to use the olive oil from the capers)
  • 1 tsp mustard
  • 1 pinch of salt

Instructions:

  1. Peel the kohlrabi and core the apples and peppers. Quarter them. Slice or finely shred the fennel, kohlrabi, apples, and peppers.
  2. Divide the vegetables onto plates and sprinkle the capers on top.
  3. For the dressing, mix vinegar, mustard, olive oil, and salt thoroughly and drizzle over the vegetables.
  4. Garnish with shaved Parmesan cheese and chopped parsley.

Serve with fresh baguette!
