Salad is loved by everyone, and we believe it suits every season. This autumn salad is a welcome change and provides plenty of vitamins and nutrients, even during this time of year. Enjoy trying it out!

Ingredients (for 2 servings):
- 1 kohlrabi bulb
- 1/2 fennel bulb
- 2 small apples
- 2 small orange snack peppers
- 2 tbsp MANI capers
- 2 tbsp chopped parsley
- Parmesan cheese
For the dressing:
- 2 tbsp white wine vinegar
- 3 tbsp MANI olive oil, extra virgin (feel free to use the olive oil from the capers)
- 1 tsp mustard
- 1 pinch of salt
Instructions:
- Peel the kohlrabi and core the apples and peppers. Quarter them. Slice or finely shred the fennel, kohlrabi, apples, and peppers.
- Divide the vegetables onto plates and sprinkle the capers on top.
- For the dressing, mix vinegar, mustard, olive oil, and salt thoroughly and drizzle over the vegetables.
- Garnish with shaved Parmesan cheese and chopped parsley.
