Pita bread with halloumi skewers and tzatziki

Pita is a light, airy and fluffy flatbread from Greece. It can be filled with many different delicacies. We chose halloumi skewers and served them with homemade tzatziki. Whether for your next party or dinner for your family - a delicious vegetarian dish.

Ingridients for the skewers:

  • 300g halloumi or tofu
  • 75ml MANI virgin olive oil
  • 1 pepper
  • 1 courgette
  • 1 onion
  •  1 clove garlic
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • 1 tbsp sage
  • 1 tbsp lemon juice
  • 1 tbsp white wine vinegar
  • Salt
  • Pepper
  • Lettuce leaves

Preparation:

  1. For the pita bread: Knead all ingredients into a smooth dough. Cover and leave to rise for 1 hour. Divide the dough into 4 parts and knead into round balls. Cover and leave to rise for 30 minutes. Flatten the dough balls by hand and roll them out to 15 cm diameter with a rolling pin. Preheat the oven to 230°C and bake the dough balls until golden brown.
  2. Cut the halloumi or tofu, peppers, courgettes and onion into bite-sized pieces and place on 4 skewers.
  3. Mix the olive oil, herbs, lemon juice, white wine vinegar, salt and pepper.
  4. Place the skewers in the marinade and brush all over. While the skewers are marinating, prepare the rest.
  5. Wash the lettuce leaves and pat dry.
  6. For the tzatziki, grate the cucumber coarsely and mix with yoghurt, salt, pepper, garlic and lemon juice. Top with MANI olive oil.
  7. Pour the marinade into a pan and heat. Put the skewers in and sear all over.
  8. Carefully open the pita bread on one side with a knife. Fill each with a lettuce leaf, the skewer and tzatziki.

MANI Tip:

Depending on the season, the vegetables for the skewers can be varied. For the vegan version, use tofu instead of halloumi and use vegan soy yoghurt for the tzatziki.
